A management team was able to conceal its embezzlement of nearly $100,000 until the store owner worked some shifts to allow the management team couple to have two consecutive days off together. The location owner discovered cash receipts on his shifts were substantially more than on the management team’s shifts.

Lesson 1, always have unrelated replacement teams take time off. It’s common to discover fraud and other work related problems when there’s a change of personnel.

The owner sent friends in to pay by cash and learned how to scheme worked. When the management team determined that a customer was paying by cash, the order would be cancelled in the system, no receipt would be produced, and they simply pocketed the cash.

Lesson 2: don’t adopt a policy of requiring a customer to ask for a receipt, the policy should be that every customer should get a receipt. In fact, have a sign that states, “if you don’t receive a receipt, call the owner’s phone number and the next meal is on us -or- receive $10”

Lesson 3: have mystery shoppers to look for things that are not policy.
